Start cooking
• Place a pan over high heat and let it get very hot • Add olive oil and lower the heat • Add and sweat onion and mushrooms for 4-5 minutes • Add tomatoes to the pan and cook them for 5-6 minutes • Crack the eggs into a bowl and add some salt and pepper • Wisk the eggs with a fork just to break up the yolks and add them to the pan • Mix for 1 minute until the eggs start to cook • As soon as they start to set, remove from the heat • Sprinkle with oregano and… Bon Appetit!
